Peanut Butter Protein Balls

Eating healthy can take some intentional planning and effort. It is easy to plan out your breakfast, lunch, and dinner, buying ingredients that allow for easier weekly meal prep. However, if you are like me, you come home starving and in need of something sweet and savory. While I have been guilty in the past of devouring whatever appeals to my taste buds first when I get home, I am really trying to make an effort in being more thoughtful in my snacking choices. Additionally, I have a perpetually strong sweet tooth most hours of the day. It is because of this that I can eat healthy for three square meals, but then when my 8pm sweet tooth craving kicks in – all bets are off.

These no bake protein balls are the perfect solution. While the recipe can be tweaked to your specific tastes, this version has become my go to. Another great thing about these balls, is that you probably have most of the ingredients in your pantry already, and more importantly – they are NO BAKE. These Peanut Butter Protein Balls make a great snack to curb your hunger until your next meal, or even as a dessert that won’t undo your whole day. Even better – they are husband approved!

First, measure out your ingredients, and simply pour them into a medium size mixing bowl.

Mix the ingredients together until they are blended well. If the mix is too dry, try adding a little extra honey.

Similar to making drop cookies, take spoonfuls of the mixture and roll into tight balls.

On a plate, pour some more dry oats and unsweetened coconut flakes and mix them together. Roll the dough balls in the dry mixture until they are lightly coated. You probably won’t completely cover them, and that is okay.

That’s it! So easy, fairly healthy, and delicious! Seriously, they taste like cookie dough without the worry of eating raw egg.
