Virginia Peanut Soup

This past weekend my husband and I ventured out to Middleburg, VA as our Valentine’s date. Middleburg is an absolutely LOVELY little Virginia town. We tend to pass through every so often, and every time we do, we find ourselves finding new and interesting things to do and see there.

While out there this past weekend, we stopped by the Mt. Defiance Cidery & Distillery on Washington Street. Mt. Defiance has a variety of unique drink recipes that mix their rum, absinthe, and whiskey. They also have a handful of unique and delicious ciders to try. We sampled a flight of the champagne cider, rose cider, and 5 pepper cider. All of which were awesome! The champagne cider tasted exactly like a Brut champagne, the rose cider was delicious and sweet, and the 5 pepper cider is for pepper lovers. One sniff and your nose is pleasantly inundated with the smell of fresh red bell pepper; and the taste was a perfect blend of cider and light peppery notes. The tasting room was quaint and decorated in a beautiful industrial design, with unique light pendants and copper ceiling tiles. Mt. Defiance is a must see if you find yourself in the Middelburg area!

After our cider tasting, we ventured down the street to the ever popular Red Fox Inn & Tavern. This historic property dates back to 1728 and is host to a quaint hotel and delicious tavern. While perusing the menu, we noticed something that our bartender at Mt. Defiance had suggested to us, something that neither of us had ever heard of, but apparently is a Virginia staple – Peanut Soup. This delicious soup was a true peanut lover’s dream. Thick and creamy, this soup was delicious on the the palette and warmed the soul on a cool winter evening. Everything about The Red Fox Inn & Tavern is historic perfection. The dimly lit tavern has an abundance of ambiance for an intimate dinner or brunch. The menu has a wide variety of dishes that incorporate local ingredients; and the bar menu has an expansive wine and spirit list, some of which are local to the Virginia area. The next time you find yourself in need of a unique dining experience, do yourself a favor and make a reservation at The Red Fox Inn & Tavern.

Since we LOVED the peanut soup SO MUCH, we set out to make it at home a few days later. While there are several versions out there, and I do think mine could be tweaked a little, I cannot rave enough about how good and unique this soup is. If you are need of an easy soup recipe, this is a must try!


What you need:

-2 TB butter

-1 onion

-6 cups of chicken stock/broth

-2 TB flour

-1 cup of heavy cream

-1 1/2 cups of peanut butter

-2 teaspoons of hot sauce

-fresh lime juice

-chopped peanuts

-scallions/green onions/chives


Directions:

  1. Chop the onion and set aside.
  2. In a large soup pot, melt the butter.
  3. Once the butter has melted, add the onion and saute until it becomes translucent.
  4. Add in the chicken broth, and bring to a boil.
  5. Whisk in the flour.
  6. Stir until the flour is perfectly blended.
  7. Add in the cream and peanut butter, and stir until blended.
  8. Add the hot sauce and lime juice to taste.
  9. Simmer until you are ready to serve.
  10. Garnish with chopped peanuts and chives.
  11. Enjoy!
