Let me just begin by saying that I am not a big fan of pork, however I am a HUGE fan of tacos. Over the summer we ventured to Union Market in DC, and there I had a bite of a Korean pork taco and it was divine. In an effort to try new things in the new year, I set out to create an easy weeknight meal of Korean pork tacos at home.
What you need:
-pulled pork (we picked up a little less than a pound at our Whole Foods)
-Sweet Asian BBQ sauce
-KIM (or other Asian hot sauce)
- Our pork wasn’t pulled, so we ended up shredding it at home. Mix with the Sweet Asian BBQ until the pork is well coated, and set aside.
- In a large bowl, mix 4 cups of the shredded cabbage, 4 tablespoons of mayonnaise, 2 tablespoons of rice vinegar, 1 teaspoon of soy sauce, 1 teaspoon of honey, a few drizzles of yellow mustard, and some chopped onion. Mix well and let chill.
- When you are ready to eat, warm up the tortillas, and layer the slaw with pulled pork, fresh cilantro, sesame seeds, and then drizzle the KIM (or hot other hot sauce).
- Serve and enjoy!
