Spicy Shrimp Scampi with Prosciutto

In an effort to use up a lot of what we had in the fridge, I created what I guess could be called “Spicy Shrimp Scampi with Prosciutto”. It was so hard not to continue eating the whole pan.

What you need:

-1 bag of frozen shrimp (save yourself some time and get it cleaned and deveined)


-frozen peas (about a cup)

-artichoke hearts (with oil from the jar)


-cherry and grape tomatoes

-2 small hot peppers


-olive oil

-white wine


-garlic powder

-Italian seasoning

-pizza sauce

-grated Parmesan cheese

-fresh mozzarella



  1. Heat olive oil and white wine in a large skillet.
  2. Once the oil has heated up, place the shrimp into the pan.
  3. Let the shrimp saute until they are about 90% done.
  4. In a separate pot, bring pasta water to a boil.
  5.  When the shrimp are almost done, remove them from the skillet.
  6. Squeeze fresh lemon juice, olive oil, white wine, a little grated Parmesan cheese, Italian seasoning, and garlic powder into the skillet. Stir and let cook for a few minutes.
  7. Add chopped onions, hot peppers, and frozen peas to the sauce. Cook for a few minutes until the onions begin to sweat and peas defrost.
  8. Add three spoonfuls of pizza sauce, and stir to create a rose sauce.
  9. Add chopped tomatoes, prosciutto, and the shrimp to the sauce.
  10. When the spaghetti is about two minutes away from being done, take it out of the pot and add it to the skillet with the sauce. Add a few spoonfuls of pasta water as well.
  11. When the timer goes off, remove from heat and serve.
  12. Sprinkle fresh mozzarella and basil on top – enjoy!
