Baked Salmon with Honey

I am a firm believer that weeknight rushed meals do not have to solely consist of Chinese take out or PB&J. Costco sells bags of frozen salmon fillets that are already portioned out. For a quick, healthy meal, we will defrost a few of the fillets on any given weeknight.

For this version of the salmon, all I did was drizzle local honey, olive oil, and fresh lemon juice on the top side of the fillet. Then I gave it a heavy dash of garlic powder and black pepper; and then tossed it in the oven at about 375 F for about 15 minutes.

Next, I thinly sliced some yellow squash and zucchini, as well as chopped broccoli, and threw in a handful of cherry and grape tomatoes from our garden. I drizzled olive oil and red pepper all over the veggies, and gave it a dash or two of sea salt; and placed it in the oven as well for about 10-12 minutes.

We also added a side of super easy mushroom risotto that I find in the rice aisle at the store. It takes about 20 minutes on the stove, but is oh- so yummy and comes in a few different flavors such as broccoli or saffron.

Ta-da! An easy, healthy weeknight meal that will won’t undo your workout at the gym.
