-frozen shrimp (peeled, devined, tail off)
-spices to taste
-Old Bay seasoning
In a small bowl, crack and whip egg. In another bowl, add flour (amount will depend on how many shrimp you are making). In a third bowl create a dry rub of the Old Bay and other spices you choose. Dip defrosted shrimp into the flour, egg, and then dry rub. Place on a baking sheet at 350 degrees.
While shrimp are cooking, toast your Brioche rolls. Spread a light about of mayo on the rolls. When shrimp are done, layer on the roll with avocado, tomato, and lettuce.
